Ingredients
  

2 cups fresh or frozen cranberries

1 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon cornstarch

1 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup rolled oats

½ teaspoon cinnamon

½ cup chopped nuts (walnuts or pecans, optional)

Powdered sugar for dusting (optional)

Instructions
 

Prepare the Cranberry Filling:

    In a medium saucepan, combine the cranberries, ½ cup of granulated sugar, lemon juice, vanilla extract, and cornstarch. Cook over medium heat until the cranberries start to burst and the mixture thickens (about 5-7 minutes). Remove from heat and let it cool.

      Make the Crust and Crumble Topping:

        In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon. In another bowl, cream the softened butter and remaining ½ cup of granulated sugar until light and fluffy. Gradually mix in the dry ingredients until crumbly. Stir in the oats and chopped nuts (if using), mixing until well combined.

          Assemble the Bars:

            Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving overhang for easy removal. Press about 2/3 of the crumble mixture evenly into the bottom of the prepared pan to form a crust. Pour the cranberry filling over the crust, spreading it evenly. Then sprinkle the remaining crumble mixture on top.

              Bake:

                Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the cranberry filling is bubbly.

                  Cool and Serve:

                    Allow the bars to cool in the pan on a wire rack for at least 1 hour. Once cooled, lift the bars out using the parchment, cut into squares, and dust with powdered sugar if desired.
