2 lbs beef stew meat, cut into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup beef broth

1 cup low-sodium soy sauce

1 cup mushrooms, sliced (button or cremini)

1 tablespoon Worcestershire sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 teaspoon dried thyme

1 teaspoon pepper

1 teaspoon salt (adjust to taste)

3 cups egg noodles

Fresh parsley for garnish (optional)

Prepare the Meat: In a large skillet over medium-high heat, brown the beef stew meat on all sides, about 5-7 minutes. You may need to do this in batches. Transfer the browned meat to the crockpot.

    Sauté Aromatics: In the same skillet, add a little oil if needed, and sauté the onions and garlic until tender and fragrant, about 3-4 minutes. Transfer this mixture to the crockpot.

      Add Liquids: Pour in the beef broth, soy sauce, Worcestershire sauce, and add the dried thyme, pepper, and salt. Stir everything together until well combined.

        Add Mushrooms: Gently fold in the sliced mushrooms. They will add moisture and flavor as they cook.

          Cook in the Crockpot: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and easily shredded.

            Thicken the Sauce: About 30 minutes before serving, mix the cornstarch with water to create a slurry and stir it into the crockpot. This will thicken the sauce. If you're using the high setting, switch to low after adding the slurry.

              Cook the Noodles: In the last 20 minutes of cooking, add the egg noodles directly into the crockpot. Stir well, replace the cover, and allow the noodles to cook in the flavorful sauce.

                Serve: Once the noodles are cooked and the sauce is thickened, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
