1 large head of green cabbage, cored and chopped

1 lb ground beef (or turkey for a lighter option)

1 large onion, diced

2 cloves garlic, minced

1 cup long-grain rice, uncooked

4 cups beef broth (or vegetable broth for a vegetarian option)

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes (with juice)

2 tsp dried oregano

1 tsp paprika

1 tsp garlic powder

1 tsp salt (adjust to taste)

½ tsp black pepper

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3–4 minutes.

    Brown the Meat: Add the ground beef to the pot. Cook, breaking it up with a spoon, until it is browned and cooked through. Drain excess fat if necessary.

      Add the Cabbage: Stir in the chopped cabbage and cook for about 5 minutes until it starts to soften.

        Incorporate the Rice and Liquids: Add the uncooked rice, beef broth, tomato sauce, diced tomatoes, oregano, paprika, garlic powder, salt, and pepper. Stir well to combine all the ingredients.

          Simmer the Soup: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 30–35 minutes, or until the rice and cabbage are tender.

            Adjust Seasonings: Taste the soup and adjust the seasonings as desired. If you prefer a little heat, you can add some red pepper flakes at this stage.
