1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/3 cup granulated sugar

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar (additional)

1 teaspoon vanilla extract

4 large eggs

½ cup heavy cream

1 tablespoon lemon juice

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil to prevent water from seeping in during baking.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/3 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to create an even layer. Bake for 10 minutes, then let it cool.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add 1 cup of sugar and vanilla extract, mixing until fully combined.

        Incorporate Eggs: Add the eggs one at a time, allowing each one to fully incorporate before adding the next. Scrape down the sides of the bowl as needed to ensure everything is well mixed.

          Add Sour Cream and Heavy Cream: Mix in the sour cream, heavy cream, and lemon juice until the mixture is smooth and creamy without lumps.
