2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar (for crust)

4 (8-ounce) packages cream cheese, softened

1 cup granulated sugar (for filling)

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1 tablespoon all-purpose flour

Zest of 1 lemon (optional)

Fresh berries or fruit topping (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with non-stick spray or butter.

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until combined and crumbly. Press the mixture firmly into the bottom of the prepared springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool slightly.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and fluffy. Gradually add in 1 cup of sugar and beat until creamy. Add the vanilla extract, lemon zest (if using), and mix until incorporated.

        Add Eggs: Add eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

          Incorporate Sour Cream & Flour: Add the sour cream and flour to the mixture. Blend until the mixture is smooth and all ingredients are fully incorporated.

            Pour the Filling: Gently pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

              Bake the Cheesecake: Place the cheesecake in the center of the preheated oven and bake for about 60-70 minutes, or until the edges are set and the center is slightly jiggly.

                Cool and Chill: Once baked, turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for about 1 hour. After that, remove it and let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight for best flavor and texture.

                  Serve: Before serving, you can top the cheesecake with fresh berries or your choice of fruit topping. Carefully remove the sides of the springform pan, slice, and enjoy your classic New York cheesecake!
