Ingredients
  

1 pound breakfast sausage (preferably mild or spicy, depending on preference)

8 large eggs

2 cups milk

4 cups cubed day-old bread (white or whole grain)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green for color)

1/2 cup diced onion

1 teaspoon garlic powder

1 teaspoon ground mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Use a spatula to crumble the sausage into small pieces as it cooks. Drain excess fat and set aside.

      Sauté Vegetables: In the same skillet, with a bit of the sausage grease, add diced bell peppers and onions. Sauté for 3-4 minutes until the vegetables are tender. Remove from heat.

        Mix Eggs and Milk: In a large mixing bowl, whisk together the eggs, milk, garlic powder, ground mustard, and a pinch of salt and pepper until well combined.

          Combine Ingredients: Add the cooked sausage, sautéed vegetables, cubed bread, and shredded cheese into the egg mixture. Gently fold the ingredients together until everything is evenly coated.

            Pour into Casserole Dish: Grease a 9x13 inch casserole dish and pour the mixture into it, spreading it evenly.

              Bake: Bake in the preheated oven for 45-50 minutes, or until the center is set and the top is golden brown.

                Cool and Garnish: Let the casserole cool for about 5-10 minutes before slicing. Garnish with freshly chopped parsley before serving.

                  Serve: Slice into squares and serve warm. It's perfect for breakfast, brunch, or any gathering!
