Ingredients
  

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup breadcrumbs

2 tablespoons olive oil

1/4 teaspoon paprika

Instructions
 

Preheat your oven to 350°F (175°C).

    Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain, rinse under cold water, and set aside.

      In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to form a roux, cooking for about 1-2 minutes until golden.

        Gradually whisk in the milk, stirring constantly to avoid lumps. Continue cooking and stirring until the sauce thickens, about 5-7 minutes.

          Stir in the Dijon mustard, garlic powder, salt, and pepper. Remove from heat and gradually add the cheddar and Gruyère cheese, stirring until melted and smooth.

            Combine the cooked macaroni with the cheese sauce, mixing thoroughly until all pasta is coated.

              Transfer the mac and cheese to a greased 9x13-inch baking dish.

                In a small bowl, mix the breadcrumbs with olive oil and paprika. Sprinkle the mixture evenly over the top of the mac and cheese.

                  Bake in the preheated oven for about 25-30 minutes, or until the top is golden and crispy.

                    Allow to cool for 5 minutes before serving.
