Ingredients
  

1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1/4 tsp salt

1 tsp vanilla extract

2 large eggs

1/2 cup granulated sugar

2 tsp ground cinnamon

Oil for frying (vegetable or canola)

Optional: chocolate sauce for dipping

Instructions
 

In a medium saucepan, combine the water, butter, and salt. Bring to a simmer over medium heat until the butter is melted.

    Remove from heat and stir in the flour and vanilla extract until a smooth dough forms. Let it cool for a few minutes.

      Beat in the eggs, one at a time, until fully incorporated and the dough is smooth and shiny.

        Heat about 2 inches of oil in a deep pot or fryer to 365°F (185°C).

          While the oil is heating, mix the granulated sugar and ground cinnamon in a shallow bowl and set aside.

            Using a piping bag fitted with a large star tip, carefully pipe 2-inch long strips of dough directly into the hot oil, cutting them with scissors. Fry a few at a time until golden brown, about 2-3 minutes per side.

              Once cooked, remove churro bites with a slotted spoon and drain on paper towels.

                Immediately toss the churro bites in the cinnamon sugar mixture until well coated.

                  Serve warm, optionally with chocolate sauce for dipping.
