Ingredients
  

1 package refrigerated pie crusts (2 crusts)

1/4 cup brown sugar

1 tablespoon ground cinnamon

1/4 cup butter, softened

1/2 cup powdered sugar

1 tablespoon milk

1/2 teaspoon vanilla extract

1 egg, beaten (for egg wash)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Roll out the pie crusts on a lightly floured surface to smooth them out, then cut each crust into rectangles (about 4x6 inches). You should have 8 rectangles total (4 for the tops and 4 for the bottoms).

      In a small bowl, mix together the brown sugar and cinnamon.

        Spread the softened butter evenly on the bottom rectangles of the pie crusts. Sprinkle the cinnamon-sugar mixture generously over the butter.

          Top each of the cinnamon-sugar coated rectangles with another pie crust rectangle, sealing the edges by crimping them with a fork.

            Cut small slits in the tops of the Poptarts to allow steam to escape.

              Brush the tops with the beaten egg for a golden finish.

                Bake in the preheated oven for 15-18 minutes, or until golden brown.

                  While the Poptarts are baking, whisk together the powdered sugar, milk, and vanilla extract in a bowl to make the glaze. Adjust the consistency with more milk or sugar if needed.

                    Once baked, allow the Poptarts to cool for a few minutes before drizzling with the glaze.

                      Serve warm or allow to cool completely before storing them in an airtight container.
