2 medium apples, peeled and diced (preferably Granny Smith)

1/2 cup chopped walnuts (optional)

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper for easy removal.

    Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set it aside.

      Cream the butter and sugar: In a large mixing bowl, combine the softened butter and granulated sugar. Beat them together with an electric mixer on medium speed until the mixture is light and fluffy, about 3-4 minutes.

        Add the eggs and vanilla: Add in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

          Incorporate the yogurt: Mix the Greek yogurt into the wet mixture until well combined.

            Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix; you want a few lumps to remain.

              Fold in apples and walnuts: Gently fold in the diced apples and walnuts (if using) into the batter, ensuring they are evenly distributed.
