Ingredients
  

1 cup all-purpose flour

1 cup water

1/4 cup granulated sugar (plus more for coating)

1/4 cup unsalted butter

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2 large eggs

Oil for frying

Dipping chocolate sauce (optional)

Whipped cream (optional)

Instructions
 

Prepare the Dough: In a medium saucepan, combine water, sugar, butter, and salt. Bring to a boil over medium heat, stirring until the butter has melted.

    Mix the Flour: Remove the saucepan from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

      Incorporate Eggs: Allow the dough to cool slightly (about 5 minutes). Then, add the eggs one at a time, mixing well after each addition until smooth. Stir in the vanilla extract.

        Heat the Oil: In a large, deep skillet or pot, heat about 2 inches of oil to 375°F (190°C).

          Shape the Poppers: Transfer the dough to a piping bag fitted with a large round tip. Pipe small, bite-sized pieces (approximately 1 inch long) into the hot oil, making sure not to overcrowd.

            Fry Until Golden: Fry the churros poppers for 2-3 minutes on each side until they are golden brown and puffed. Use a slotted spoon to remove them and drain on paper towels.

              Coat in Cinnamon Sugar: Mix together the granulated sugar and ground cinnamon in a shallow bowl. Roll the warm churros in the cinnamon sugar until fully coated.

                Serve: Serve warm with a side of dipping chocolate sauce and whipped cream, if desired.
