Ingredients

1 box (12 oz) graham crackers

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

1 box (3.4 oz) vanilla instant pudding mix

2 cups milk

4 oz semisweet chocolate, chopped

1/2 cup unsweetened cocoa powder

1/2 cup granulated sugar

1/4 cup water

1 teaspoon vanilla extract (for the chocolate glaze)

Instructions

Prepare the Vanilla Layer:

    - In a large mixing bowl, whip the heavy cream, powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.

      - In another bowl, whisk together the vanilla pudding mix and milk until smooth and thickened.

        - Gently fold the whipped cream into the pudding until well combined. Set aside.

          Assemble the Cake:

            - In a 9x13 inch baking dish, layer half of the graham crackers to cover the bottom completely.

              - Spread half of the vanilla cream mixture on top of the graham crackers, smoothing it out evenly.

                - Add another layer of graham crackers, followed by the rest of the vanilla cream. Top with a final layer of graham crackers.

                  Make the Chocolate Glaze:

                    - In a small saucepan over medium heat, combine the chopped chocolate, cocoa powder, granulated sugar, water, and 1 teaspoon of vanilla extract.

                      - Stir constantly until the mixture is smooth and glossy. Remove from heat and let cool slightly.

                        Finish the Cake:

                          - Pour the chocolate glaze over the top layer of graham crackers, spreading it out with a spatula to cover evenly.

                            - Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                              Serve:

                                - Once set, cut into squares and serve chilled. Enjoy your delicious chocolate éclair icebox cake!
