3 ripe bananas, mashed

1/3 cup melted coconut oil (can substitute with unsalted butter)

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    Mix Wet Ingredients: In a mixing bowl, combine the melted coconut oil and both sugars (brown and granulated). Whisk until well incorporated. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and the mashed bananas until everything is fully combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt until mixed.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the banana mixture, stirring until just combined (do not overmix). Gently fold in the chocolate chips and nuts (if using).

          Fill Muffin Tins: Divide the batter evenly among the muffin liners, filling each liner about 2/3 full to allow for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
