Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup all-purpose flour

2 eggs, beaten

1/4 cup vegetable oil (for frying)

2 tablespoons sesame oil

3 cloves garlic, minced

1 inch piece of ginger, grated

1/4 cup low-sodium soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1/2 teaspoon red pepper flakes (optional)

2 tablespoons sesame seeds

3 green onions, chopped (for garnish)

Cooked white rice (for serving)

Instructions

Prepare the Chicken: In a large bowl, toss the chicken pieces with cornstarch and flour until well-coated. This will create a crispy exterior.

Batter the Chicken: Dip the coated chicken pieces into the beaten eggs, allowing excess to drip off.

Fry the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the chicken in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Make the Sauce: In another pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Stir in the soy sauce, honey, rice vinegar, and red pepper flakes. Bring the mixture to a simmer.

Combine and Glaze: Add the crispy chicken to the sauce, tossing well to coat evenly. Allow the chicken to cook in the sauce for an additional 2-3 minutes, letting it absorb the flavors.

Serve: Remove from heat, sprinkle the sesame seeds and chopped green onions over the dish. Serve over cooked white rice for a complete meal.
