Ingredients
  

2 slices of sourdough bread

1 cooked chicken breast, shredded or sliced

½ cup marinara sauce

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 teaspoon dried oregano

1 tablespoon fresh basil, chopped (optional)

2 tablespoons butter

Garlic powder to taste

Salt and pepper to taste

Prepare the Chicken: If you haven't already, cook a chicken breast and let it cool slightly. Shred or slice the chicken into small pieces.

    Mix the Filling: In a bowl, combine the shredded chicken, marinara sauce, mozzarella cheese, Parmesan cheese, dried oregano, basil (if using), and a pinch of salt and pepper. Mix until well combined.

      Prepare the Bread: Spread a thin layer of garlic powder on one side of each slice of sourdough bread for extra flavor.

        Assemble the Sandwich: Place one slice of bread, garlic side down, in a skillet over medium heat. Spoon the chicken and cheese mixture generously over this slice. Top with the second slice of bread, garlic side up.

          Grill the Sandwich: Add 1 tablespoon of butter to the skillet. Let the sandwich cook for about 3-4 minutes until the bread is golden brown. Carefully flip the sandwich using a spatula, adding the remaining tablespoon of butter to the skillet if necessary. Grill for another 3-4 minutes until the other side is also golden and the cheese is melted.

            Slice and Serve: Remove the sandwich from the skillet, let it sit for a minute, then slice in half. Serve warm with extra marinara sauce for dipping, if desired.
