Ingredients

1 can of crescent roll dough

8 oz cream cheese, softened

1/3 cup granulated sugar

1/2 teaspoon vanilla extract

1/2 cup cherry pie filling (or fresh cherries, pitted and chopped)

1 egg, beaten (for egg wash)

Powdered sugar (for dusting, optional)

Fresh mint leaves (for garnish, optional)

Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat with a mixer on medium speed until the mixture is smooth and creamy.

Unroll the crescent roll dough onto a clean surface and separate the triangles. You should have a total of 8 triangles.

Take each triangle and place about 1 tablespoon of the cream cheese mixture at the wider end of the triangle, followed by a teaspoon of cherry pie filling.

Carefully roll the triangle from the wider end to the pointed end, enclose the filling, and shape it into a crescent. Pinch the edges to seal.

Place the rolled crescents on the prepared baking sheet and brush each one with the beaten egg.

Bake in the preheated oven for 12-15 minutes, or until golden brown.

Remove from the oven and allow to cool slightly. If desired, sprinkle with powdered sugar and garnish with fresh mint leaves before serving.

Enjoy your delightful Cherry Cheesecake Crescent Bites warm or at room temperature!
