1 lb ground beef (80/20 for juiciness)

1/2 lb ground pork

1 cup panko breadcrumbs

2 large eggs

1/2 cup milk

1 medium onion, finely chopped

1 cup bell peppers (mix of red, green, and yellow), finely chopped

1 cup shredded provolone cheese (or cheese of choice)

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs

Salt and pepper to taste

1/2 cup ketchup (for topping)

1/4 cup shredded mozzarella cheese (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it lightly.

    Sauté Vegetables: In a skillet, heat a drizzle of olive oil over medium heat. Add the chopped onions and bell peppers, cooking until softened (about 5-7 minutes). Remove from heat and let cool slightly.

      Mix the Meatloaf: In a large mixing bowl, combine the ground beef, ground pork, panko breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, onion powder, dried Italian herbs, and the sautéed vegetables. Season with salt and pepper. Mix until well combined, but don’t overmix to keep it tender.

        Add Cheese: Fold in the provolone cheese gently until just incorporated.

          Form the Loaf: Pour the meat mixture into the prepared loaf pan, shaping it into a loaf. Press down gently to compact it.

            Prepare the Topping: Spread the ketchup evenly over the top of the meatloaf. Sprinkle the mozzarella cheese on top of the ketchup.

              Bake: Place the loaf pan in the preheated oven and bake for about 1 hour, or until the meatloaf reaches an internal temperature of 160°F (70°C) and is cooked through.
