Ingredients
  

1 lb ground beef

1/2 lb ground pork (or sausage)

1 cup breadcrumbs

1 large egg

1 small onion, finely chopped

3 cloves garlic, minced

1 cup shredded cheddar cheese (save 1/2 cup for topping)

1/2 cup milk

1 tsp Worcestershire sauce

1 tsp Italian seasoning

Salt and pepper to taste

2 cups mixed vegetables (carrots, green beans, corn, or peas)

1/2 cup ketchup (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meat Mixture: In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, chopped onion, minced garlic, half of the cheddar cheese, milk, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until well combined.

      Layer the Vegetables: In a greased baking dish, spread the mixed vegetables evenly on the bottom.

        Add the Meatloaf Mixture: Shape the meat mixture into a loaf or simply spread it over the vegetables in the baking dish, pressing it down gently.

          Toppings: Spread the ketchup evenly over the top of the meatloaf. Sprinkle the remaining cheddar cheese over the ketchup layer.

            Bake: Cover the dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the meatloaf is cooked through (internal temperature should reach 160°F/70°C).

              Garnish and Serve: Once cooked, remove from the oven and let cool for a few minutes. Garnish with fresh parsley before slicing and serving.
