Ingredients
  

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked quinoa or rice (optional for added heartiness)

1/2 cup diced red onion

1/2 cup corn (fresh, frozen, or canned, drained)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the shredded chicken with BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until the chicken is fully coated.

      If using, stir in the cooked quinoa or rice, diced red onion, and corn to the mixture. This will add additional texture and flavor.

        In a greased 9x13 inch baking dish, spread the chicken mixture evenly.

          Sprinkle the shredded cheddar cheese and mozzarella cheese generously over the top of the chicken mixture.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

              After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and slightly golden on top.

                Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley or cilantro.

                  Serve warm, and enjoy your cheesy, BBQ goodness!
