Cheesy Angel Chicken and Rice Casserole

2 cups cooked chicken, shredded

1 cup long-grain white rice, uncooked

4 cups chicken broth

1 cup cream of chicken soup

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups shredded cheddar cheese (divided)

1 cup frozen mixed vegetables (peas, carrots, and corn)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Casserole Dish: In a large mixing bowl, combine the cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until smooth.

      Combine Ingredients: Add the cooked chicken, uncooked rice, mixed vegetables, and 1½ cups of shredded cheddar cheese to the bowl. Pour in the chicken broth and stir everything together until fully combined.

        Transfer to Casserole Dish: Lightly grease a 9x13-inch casserole dish with olive oil. Pour the chicken and rice mixture into the dish, spreading it out evenly.

          Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes.

            Add More Cheese: After 45 minutes, remove the foil and sprinkle the remaining ½ cup of shredded cheddar cheese on top. Return to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

              Let it Rest: Once done, take the casserole out of the oven and let it rest for about 5-10 minutes. This allows the flavors to set and makes it easier to serve.

                Garnish and Serve: Garnish with fresh parsley if desired. Serve hot and enjoy the cheesy, comforting flavors of your Angel Chicken and Rice Casserole!
