The star of this dessert is, of course, the strawberries. When selecting strawberries for stuffing, it’s important to choose large, ripe berries that are firm and free from blemishes. The size of the strawberries allows for ample filling, while the ripeness ensures that they are sweet and flavorful. Fresh strawberries not only provide natural sweetness but also offer a refreshing contrast to the rich cheesecake filling.

Ingredients

16 large fresh strawberries

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/4 cup sour cream

1/4 cup heavy whipping cream

1/2 cup graham cracker crumbs

Fresh mint leaves for garnish (optional)

Chocolate drizzle (optional)

Instructions

Prepare the Strawberries: Wash the strawberries and gently pat them dry. Cut off the stems and a small slice off the bottom of each berry to create a flat base, making sure they can stand upright.

Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar, mixing until well combined. Stir in vanilla extract and sour cream until the mixture is creamy and smooth.

Whip the Cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cheesecake mixture until fully incorporated.

Stuff the Strawberries: Use a piping bag or a small spoon to fill each strawberry with the cheesecake mixture, overfilling slightly for an extra treat.

Coat with Graham Cracker Crumbs: Roll the top of each stuffed strawberry in graham cracker crumbs, allowing them to stick to the filling.

Garnish: If desired, drizzle melted chocolate over the stuffed strawberries for added flair and flavor. Place a fresh mint leaf on top of each strawberry as an elegant garnish.

Chill: Refrigerate the stuffed strawberries for at least 30 minutes before serving to let the flavors meld and the filling firm up.

Serve: Arrange the cheesecake stuffed strawberries on a serving platter and enjoy this deliciously sweet and creamy treat with your loved one!
