Cheesecake Stuffed Chocolate Chip Cookies

For the Chocolate Chip Cookies:

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 cups semi-sweet chocolate chips

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg yolk

Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese with a handheld mixer until smooth. Add the granulated sugar, vanilla extract, and egg yolk, mixing until well combined. Set aside in the refrigerator to firm up while you prepare the cookie dough.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.

      In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.

        Chill the Cookie Dough: Cover the cookie dough and refrigerate for about 30 minutes. This will help the cookies hold their shape while baking.

          Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
