Sourdough bread has become increasingly popular in recent years, not only for its unique flavor but also for its health benefits. The process of fermentation that sourdough undergoes not only gives it its signature tangy taste but also makes it easier to digest. The lactic acid produced during fermentation helps break down gluten, making it a better option for those with gluten sensitivity, though not suitable for those with celiac disease.

8 slices of sharp cheddar cheese

8 slices of cooked bacon, crumbled

1/4 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh arugula or spinach (optional, for garnish)

Instructions

Preheat the Grill: Preheat a skillet or griddle over medium heat.

Prepare the Spread: In a small bowl, mix together the mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.

      Assemble the Sandwiches:

        - Spread a layer of the mayonnaise mixture on one side of each slice of sourdough bread.

          - On 4 slices, layer the turkey breast, crumbled bacon, and 2 slices of cheddar cheese.

            - Top with the other 4 slices of bread, spread side down.

              Grill the Sandwiches:

                - Drizzle olive oil on the skillet or griddle.

                  - Carefully place the sandwiches on the pan, cooking in batches if necessary.

                    - Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

                      Serve:

                        - Once grilled, remove from heat and let it rest for a minute.

                          - Cut each sandwich in half, and garnish with fresh arugula or spinach if desired.
