For the Crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ teaspoon ground cinnamon

½ teaspoon nutmeg

For the Apple Topping:

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

2 tablespoons butter

¼ cup brown sugar

1 teaspoon cinnamon

½ teaspoon vanilla extract

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, cubed

½ cup heavy cream

1 teaspoon salt

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a large mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until evenly mixed.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

          Make the Cheesecake Filling:

            - In a mixing bowl, beat the softened cream cheese with sugar until smooth and fluffy.

              - Add in the vanilla extract and mix until incorporated.

                - Beat in the eggs, one at a time, mixing well after each addition.

                  - Finally, add the sour cream, cinnamon, and nutmeg. Mix until smooth.

                    Assemble the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
