8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 tbsp olive oil

1/2 cup buffalo sauce (plus more for drizzling)

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup crumbled blue cheese

1/4 cup freshly chopped parsley (for garnish)

Salt and pepper to taste

Green onions, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-7 minutes until the chicken is cooked through and slightly browned.

      Add Buffalo Sauce: Pour in the buffalo sauce and stir well to coat the chicken. Let it simmer for about 2 minutes.
