1 loaf of day-old brioche bread, cut into cubes

4 large eggs

2 cups whole milk

1 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

3 ripe bananas, sliced

1/2 cup chopped pecans (optional)

1/4 cup butter, melted

Pinch of salt

Maple syrup, for serving

Prepare the baking dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Layer the bread: Place half of the cubed brioche bread in the greased baking dish. Spread half of the sliced bananas over the bread and sprinkle with half of the pecans if using. Top with the remaining bread cubes, then add the remaining banana slices and pecans.

      Make the custard: In a mixing bowl, whisk together the eggs, milk, brown sugar, vanilla extract, ground cinnamon, nutmeg, melted butter, and a pinch of salt until well combined.

        Combine and soak: Pour the egg mixture evenly over the layered bread, ensuring all bread is well soaked. Gently press down to help the bread absorb the custard. Cover the dish with plastic wrap and refrigerate for at least 1 hour or overnight for best results.
