2 cups broccoli florets

2 medium potatoes, peeled and diced

1 small onion, chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1 tablespoon olive oil

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

Fresh chives or parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

    Stir in the diced potatoes and broccoli florets, cooking for an additional 5 minutes.

      Pour in the vegetable or chicken broth, bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the potatoes are tender.

        Once the vegetables are cooked, use an immersion blender to puree the soup to your desired consistency (you can also transfer the soup in batches to a blender).

          Stir in the heavy cream, followed by the shredded cheddar cheese. Mix until the cheese has melted and the soup is creamy. If desired, add the smoked paprika, salt, and pepper to taste.
