Broccoli Cheese Balls

Ingredients
  

2 cups fresh broccoli florets, steamed and finely chopped

1 cup shredded sharp cheddar cheese

1/2 cup breadcrumbs (plus more for coating)

1/4 cup grated parmesan cheese

2 large eggs, beaten

2 cloves garlic, minced

1/4 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon red pepper flakes (optional for heat)

1 tablespoon olive oil (for drizzling)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the steamed and chopped broccoli, shredded cheddar cheese, breadcrumbs, grated parmesan cheese, and minced garlic.

      Add the beaten eggs, black pepper, onion powder, salt, and red pepper flakes (if using) to the bowl. Mix everything until well combined.

        Using your hands, form small balls (about 1 inch in diameter) from the mixture. Make sure they hold together well. If the mixture is too crumbly, add a little more cheese or a splash of water.

          Roll each ball in additional breadcrumbs to coat them well.

            Place the broccoli balls on the prepared baking sheet. Drizzle lightly with olive oil to help them crisp up during baking.

              Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside. Flip halfway through for even cooking.

                Remove from the oven and let them cool slightly before serving. They are delightful warm with a dipping sauce of your choice (like ranch or sriracha mayo).
