4 ripe peaches, pitted and sliced

1/4 cup unsalted butter, plus more for greasing

3/4 cup brown sugar

1/4 cup bourbon

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup buttermilk

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter.

    In a medium saucepan over medium heat, melt the 1/4 cup of butter. Add the brown sugar and bourbon, stirring until the sugar is dissolved and the mixture is bubbly. Remove from heat.

      Pour the bourbon mixture into the prepared cake pan, spreading it evenly. Arrange the sliced peaches in an attractive pattern over the sugar mixture.

        In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

          In another bowl, cream together the remaining 1/4 cup of butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.

              Pour the batter over the arranged peaches in the pan, smoothing the top.

                Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

                  Allow the cake to cool in the pan for 10 minutes, then carefully invert it onto a serving plate. Let it cool completely before slicing.
