Boat Dip (Rotel Ranch Dip)

1 can (10 ounces) RoTel diced tomatoes and green chilies, undrained

1 packet (1 ounce) ranch dressing mix

1 cup cream cheese (softened)

1 cup shredded cheddar cheese

1 cup sour cream

1 can (15 ounces) black beans, rinsed and drained

1 cup frozen corn, thawed

1-2 jalapeƱos (finely chopped, optional for extra spice)

Fresh chopped cilantro (for garnish)

Tortilla chips or veggie sticks (for serving)

Instructions
 

In a large mixing bowl, combine the softened cream cheese with the RoTel, using a spatula or electric mixer until well blended.

    Add in the ranch dressing mix and sour cream to the mixture. Stir until everything is evenly incorporated.

      Gently fold in the shredded cheddar cheese, black beans, thawed corn, and finely chopped jalapeƱos (if using).

        Transfer the mixture to a serving bowl and smooth the top with a spatula.

          Cover the dip with plastic wrap and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

            Before serving, garnish the dip with fresh chopped cilantro.

              Serve chilled or at room temperature with tortilla chips or veggie sticks for dipping.
