Before diving into the recipe, it’s essential to understand what “blackened” means in culinary terms. Blackening is a cooking technique that involves seasoning protein—often fish or chicken—with a mix of spices, then cooking it in a very hot skillet until a dark, flavorful crust forms. This method not only enhances the protein's flavor but also creates a textural contrast that pairs beautifully with creamy sauces.

Ingredients

2 large chicken breasts

2 tablespoons smoked paprika

1 tablespoon cayenne pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

8 ounces fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons butter

2 cloves garlic, minced

Fresh parsley for garnish

Instructions

Prepare the Chicken: In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and pepper to create the blackening spice mix. Pat the chicken breasts dry with paper towels and coat them thoroughly with the spice mix on both sides.

Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes per side, or until the chicken is cooked through and has a beautiful blackened crust. Remove the chicken from the pan, cover it with foil, and let it rest.

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain, reserving about 1 cup of pasta water.

Prepare the Alfredo Sauce: In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, thin it out with some reserved pasta cooking water.

Combine: Slice the blackened chicken and add it to the Alfredo sauce. Add the drained fettuccine and toss well to combine. Adjust seasoning with salt and pepper if needed, and add more reserved pasta water for desired consistency.

Serve: Plate the blackened chicken Alfredo and garnish with fresh parsley. Enjoy the bold flavors in every bite!
