1 lb boneless chicken thighs, cut into bite-sized pieces

1 tablespoon soy sauce

1 tablespoon oyster sauce

2 teaspoons cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

3 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (any color), sliced

1 cup snap peas, trimmed

2-3 teaspoons freshly cracked black pepper (adjust to taste)

1 tablespoon rice vinegar

2 green onions, chopped (for garnish)

Salt, to taste

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 30 minutes in the refrigerator.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Add Aromatics: Add the sliced onion and sauté for 2-3 minutes until soft. Then add the minced garlic and grated ginger, cooking until fragrant (about 1 minute).

        Cook the Chicken: Increase the heat to high and add the marinated chicken to the skillet. Spread the chicken pieces out in a single layer and let them sear for about 3-4 minutes without stirring. Then stir-fry until the chicken is cooked through and slightly browned (about 5-7 minutes).

          Add Vegetables: Mix in the sliced bell pepper and snap peas. Stir-fry for another 2-3 minutes until the vegetables are crisp-tender.
