Ingredients

2 cups biscuit crumbs (e.g., Digestive biscuits or Graham crackers)

1/2 cup unsalted butter, melted

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

2 cups heavy whipping cream

1/2 cup fresh berries (strawberries, blueberries, or raspberries for topping)

Fresh mint leaves for garnish

Optional: chocolate shavings for added decoration

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix the biscuit crumbs with the melted butter until well combined. The mixture should resemble wet sand.

        - Press the crust mixture into the bottom of a 9-inch springform pan or a pie dish. Ensure it's evenly spread and packed tightly.

          - Bake for 10 minutes, then remove from the oven and set aside to cool.

            Make the Cream Cheese Filling:

              - In a mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

                - Gradually add in the powdered sugar and vanilla extract, mixing until well integrated and fluffy.

                  Prepare the Whipped Cream:

                    - In a separate bowl, pour in the heavy whipping cream. Using a hand mixer, whip until stiff peaks form. Be careful not to overwhip!

                      - Gently fold the whipped cream into the cream cheese mixture until no streaks remain. This will make the filling light and fluffy.

                        Assemble the Cake:

                          - Pour the cream cheese filling over the cooled biscuit crust. Spread it evenly with a spatula.

                            - Refrigerate the cake for at least 4 hours, or overnight, to allow it to set properly.

                              Serve:

                                - Once set, carefully remove the cake from the springform pan.

                                  - Top with fresh berries and garnish with mint leaves and optional chocolate shavings for an extra touch.

                                    - Slice and enjoy your delicious Biscuit and Cream Cheese Delight Cake!
