Ingredients

2 cups elbow macaroni

1 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon sugar

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup diced celery

1 cup diced bell peppers (mixed colors)

1 cup diced cucumbers

½ cup chopped green onions

½ cup frozen peas (thawed)

2 hard-boiled eggs, chopped

Fresh parsley, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Prepare the Dressing: In a mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, garlic powder, onion powder, salt, and black pepper until smooth and well blended.

Combine Ingredients: In a large mixing bowl, add the cooled macaroni, diced celery, diced bell peppers, diced cucumbers, green onions, thawed peas, and chopped hard-boiled eggs.

Mix Well: Pour the dressing over the macaroni mixture and stir until everything is evenly coated.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour (or overnight) to allow flavors to meld.

Serve: Before serving, give the salad a gentle stir and taste; adjust seasoning if necessary. Garnish with fresh parsley for added color and flavor.
