2 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

3 tablespoons vegetable oil or lard

3/4 cup warm water (adjust as needed)

In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Stir to mix the dry ingredients well.

    Add the vegetable oil or lard to the flour mixture. Use your fingers to rub the fat into the flour until the mixture resembles coarse crumbs.

      Gradually pour in the warm water, mixing with your hand or a wooden spoon until a dough begins to form. You may need to adjust the water slightly; the dough should be soft but not sticky.

        Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic. Shape the dough into a ball.

          Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes. This helps the gluten relax and makes rolling easier.

            After resting, divide the dough into 10 equally sized portions (more or fewer, depending on your size preference). Roll each portion into a ball and lightly flatten it.

              On a floured surface, use a rolling pin to roll each ball into a thin circle, about 8-10 inches in diameter. Use additional flour as needed to prevent sticking.

                Heat a dry skillet or griddle over medium-high heat. Once hot, place one tortilla in the skillet and cook for about 30 seconds on each side until it begins to puff and develop golden brown spots.

                  Remove the tortilla from the skillet and keep it warm in a clean kitchen towel. Repeat with the remaining dough balls.
