4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

4 slices of crispy bacon, crumbled (optional)

Prep the Potatoes: Start by peeling and dicing the russet potatoes into small, even cubes to ensure they cook uniformly.

    Sauté the Aromatics: In a large pot over medium heat, add a drizzle of olive oil. Once hot, add the chopped onion and cook for 3-4 minutes, until translucent. Stir in the minced garlic and cook for another minute, until fragrant.
