3-4 lbs pork shoulder or pork butt, trimmed

1 cup balsamic vinegar

1/2 cup low-sodium soy sauce

1/4 cup honey

4 cloves garlic, minced

1 large onion, sliced

2-3 sprigs fresh thyme (or 1 teaspoon dried thyme)

2-3 sprigs fresh rosemary (or 1 teaspoon dried rosemary)

Salt and pepper, to taste

1 cup chicken or vegetable broth

2 cups carrots, cut into chunks

1 cup baby potatoes, halved (optional)

Instructions
 

Prepare the Pork: Season the pork shoulder with salt and pepper generously on all sides. This enhances the flavor of the meat.

    Make the Marinade: In a mixing bowl, whisk together the balsamic vinegar, soy sauce, honey, and minced garlic until well combined.

      Layer Ingredients in Slow Cooker: Place the sliced onions at the bottom of the slow cooker. Lay the seasoned pork roast on top of the onions.

        Add Liquid: Pour the balsamic marinade over the pork. Add the fresh thyme and rosemary, and pour the chicken or vegetable broth around the pork.

          Add Vegetables: Scatter the carrots and baby potatoes around the pork in the slow cooker.

            Cooking: Cover the slow cooker with the lid and cook on low for 8-10 hours or on high for 4-6 hours. The pork should be tender and easily shredded with a fork.

              Rest and Shred: Once cooked, remove the pork roast from the slow cooker and let it rest for about 10 minutes. Shred the meat using two forks.

                Serve: Return the shredded pork to the slow cooker, mixing it with the juices and vegetables. Serve warm either on its own, in buns, or over rice or mashed potatoes, drizzling with extra sauce.
