1 French baguette or Italian ciabatta

4 ripe tomatoes, diced

2 cloves garlic, minced

1/4 cup fresh basil, chopped

2 tablespoons balsamic vinegar

1/4 cup extra-virgin olive oil

Salt and pepper, to taste

Optional: 1/2 cup fresh mozzarella, diced

Prepare the Bread: Preheat your oven to 400°F (200°C). Slice the baguette or ciabatta into 1/2-inch thick slices. Arrange the slices on a baking sheet.

    Toast the Bread: Brush each slice lightly with olive oil. Bake for about 5 minutes or until golden and crisp, flipping halfway. Remove from the oven and let cool.

      Make the Topping: In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, balsamic vinegar, and remaining olive oil. Season with salt and pepper to taste. Gently mix until well combined.
