BEEF & TOMATO MACARONI SOUP

1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes, with juices

4 cups beef broth

1 cup elbow macaroni

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons Worcestershire sauce

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional for serving)

Prepare the Base: In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften.

    Brown the Beef: Add the ground beef to the pot. Break it up with a spoon and cook until browned (about 5-6 minutes). Drain excess fat if necessary.

      Flavor It Up: Stir in minced garlic, Italian seasoning, Worcestershire sauce, salt, and pepper. Cook for another 2 minutes until the garlic is fragrant.

        Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the beef broth. Bring the mixture to a simmer.

          Bring in the Macaroni: Once simmering, add the elbow macaroni to the pot. Cook according to the pasta package instructions (usually about 8-10 minutes) until the macaroni is tender.

            Final Touches: Taste the soup and adjust seasoning if needed. If it’s too thick, you can add a bit more broth or water.

              Serve: Ladle the soup into bowls, garnishing with fresh parsley and a sprinkle of Parmesan cheese if desired.
