1 lb (450g) boneless, skinless chicken breasts

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 cup buttermilk

1 tbsp hot sauce (adjust for heat preference)

1 cup panko breadcrumbs

Oil for frying

1/4 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp honey

1 tsp sriracha (optional, for extra heat)

1 tbsp chopped green onions (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. In a bowl, mix the buttermilk with hot sauce and marinate the chicken for at least 30 minutes, preferably an hour.

    Create the Breading Station: In a shallow dish, whisk together flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In a separate bowl, place the panko breadcrumbs.

      Coat the Chicken: Remove the marinated chicken from the buttermilk mix, allowing excess liquid to drip off. Dredge each piece in the flour mixture, shaking off any excess. Then dip it back into the buttermilk and finally coat it with panko breadcrumbs, pressing gently to adhere.

        Fry the Chicken: In a deep skillet or frying pan, heat oil over medium-high heat (about 350°F/175°C). Carefully add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

          Make the Bang Bang Sauce: In a bowl, combine mayonnaise, sweet chili sauce, honey, and sriracha (if using) until smooth. Adjust ingredients to taste according to heat and sweetness preference.

            Serve: Drizzle the Bang Bang sauce over the crispy chicken or toss the chicken pieces in the sauce for a thorough coating. Garnish with chopped green onions and sesame seeds.
