Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar (optional, adjust based on sweetness preference)

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1 cup milk (dairy or non-dairy)

2 tablespoons melted butter or coconut oil

1 teaspoon vanilla extract

Optional toppings: sliced bananas, maple syrup, chopped nuts, or chocolate chips

Instructions
 

In a large bowl, mash the ripe bananas until smooth. Leave some chunks for added texture if desired.

    In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix well to combine.

        Pour the wet mixture into the bowl with mashed bananas and stir until just combined.

          Add the dry ingredients to the wet ingredients and gently fold until no dry spots remain. Be careful not to overmix; it's okay if there are a few lumps.

            Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a little butter.

              Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles start to form on the surface (about 2-3 minutes).

                Flip the pancakes using a spatula and cook for another 1-2 minutes until golden brown and cooked through.
