Banana Cake with Cream Cheese Frosting | Easy Recipe

A delightful twist on a classic dish.

Ingredients

For the Banana Cake:

3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/2 cup buttermilk

For the Cream Cheese Frosting:

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2-3 tablespoons milk (as needed for consistency)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.

Prepare the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.

Add Eggs and Bananas: Beat in the eggs one at a time, ensuring each is well mixed before adding the next. Stir in the vanilla extract and the mashed bananas until thoroughly combined.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon (if using).

Combine Mixtures: Gradually add the dry ingredients to the banana mixture while alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined, being careful not to over-mix.

Bake: Pour the batter into the prepared baking pan(s) and smooth the top with a spatula. Bake for 25-30 minutes for the 9x13 pan or 20-25 minutes for the round pans or until a toothpick inserted in the center comes out clean.

Cool the Cake: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Make the Frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing on low speed until incorporated. Add vanilla extract and enough milk to achieve your desired frosting consistency.

Frost the Cake: Once the cake has cooled completely, spread a generous layer of cream cheese frosting on top (and between layers, if using round pans).

Serve and Enjoy: Slice the cake, serve, and enjoy the delightful flavors of your homemade Banana Bliss Cake with Cream Cheese Frosting!
