2 ripe bananas, mashed

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 large egg

1 cup buttermilk (or regular milk with 1 tablespoon of vinegar added)

1/4 cup melted butter or coconut oil

1 teaspoon vanilla extract

1/4 cup brown sugar, packed

1/2 cup chopped walnuts or pecans (optional)

Maple syrup, for serving

Instructions
 

Preheat your waffle iron according to the manufacturer’s instructions.

    In a large mixing bowl, combine the mashed bananas, melted butter, brown sugar, egg, buttermilk, and vanilla extract. Mix until well combined.

      In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix. If desired, fold in the chopped nuts for added texture.

          Lightly grease the waffle iron with cooking spray or a brush of melted butter.

            Pour an appropriate amount of batter onto the center of the preheated waffle iron (this will vary depending on your waffle iron size). Close the lid and cook until the waffles are golden brown and crisp, around 4-5 minutes.

              Carefully remove the waffles and keep them warm in a low oven while you cook the remaining batter.
