Baked Tuscan Chicken Casserole

Ingredients
  

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes, chopped (packed in oil for extra flavor)

1 cup baby spinach, chopped

1/2 cup cream cheese, softened

1/2 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 tablespoon olive oil

1 cup cooked pasta (penne or rotini works well)

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a skillet over medium heat, add olive oil. Season the chicken breasts with salt, pepper, and Italian seasoning. Sear the chicken for 4-5 minutes on each side, until browned but not fully cooked. Remove from heat and cut into bite-sized cubes.

      Make the Sauce: In a large mixing bowl, combine the softened cream cheese, heavy cream, minced garlic, sun-dried tomatoes, spinach, and half of the mozzarella cheese. Mix until well combined.

        Combine Ingredients: Add the cooked pasta and chicken pieces to the sauce mixture. Gently stir to combine all ingredients evenly.

          Prepare for Baking: Transfer the mixture into a greased 9x13 inch baking dish. Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil, if desired. Serve warm and enjoy your delicious Baked Tuscan Chicken Casserole!
