4 medium-sized russet potatoes

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets

1 cup shredded cheddar cheese

1 cup sour cream

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon olive oil

1/2 cup breadcrumbs (optional for topping)

Fresh chives for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: Wash and pierce the russet potatoes with a fork. Microwave on high for about 5-7 minutes until tender. Alternatively, you can bake them in the oven for about 45-60 minutes. Let them cool slightly before peeling and dicing into cubes.

      Cook the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2-3 minutes until vibrant green. Drain and immediately plunge into ice water to stop the cooking process. Drain well.

        Mix the Casserole Filling: In a large mixing bowl, combine the cooked chicken, blanched broccoli, diced potatoes, sour cream, chicken broth, garlic powder, onion powder, salt, pepper, and paprika. Stir until well combined.

          Assemble the Casserole: In a greased 9x13 inch baking dish, pour the chicken and vegetable mixture. Spread it evenly. Sprinkle shredded cheddar cheese evenly over the top. If you like a crunchy topping, mix breadcrumbs with a drizzle of olive oil and sprinkle over the cheese.
