Ingredients

4 large russet potatoes, washed and scrubbed

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon black pepper

1 teaspoon sea salt (or to taste)

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Cut the potatoes into wedges: Place a potato on a cutting board, cut it in half lengthwise, then cut each half into 3-4 wedges depending on the size of the potato. Repeat with all potatoes.

In a large bowl, combine the olive oil, minced garlic, paprika, oregano, thyme, black pepper, and sea salt. Whisk together until well blended.

Add the potato wedges to the bowl and toss them in the garlic oil mixture until they're evenly coated.

Spread the potato wedges out in a single layer on the prepared baking sheet. Make sure they’re not overcrowded for even baking.

Bake in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping them halfway through.

Sprinkle the grated Parmesan cheese over the wedges during the last 5 minutes of baking.

Once they are done baking, remove the wedges from the oven. Allow them to cool slightly, then sprinkle with fresh parsley.

Serve hot with your favorite dipping sauce or enjoy them plain!
