Baked Feta Pasta

Ingredients
  

1 block (about 200g) of feta cheese

300g pasta (penne or fusilli work well)

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/3 cup olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Baking Dish: In a large baking dish, place the block of feta cheese in the center. Surround it with halved cherry tomatoes and minced garlic.

      Seasoning: Drizzle olive oil over the feta and tomatoes. Sprinkle dried oregano, red pepper flakes (if using), and season with salt and pepper. Toss the tomatoes a little to coat them in the oil and seasonings.

        Bake: Bake in the preheated oven for about 30 minutes or until the feta is soft and slightly golden, and the tomatoes are blistered.

          Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water and then drain the rest.

            Combine Ingredients: Remove the baking dish from the oven. Use a fork to mash the baked feta and tomatoes together until creamy. If the mixture is too thick, add a bit of the reserved pasta water until you get your desired consistency.

              Mix with Pasta: Add the drained pasta to the baking dish and toss to coat the pasta in the creamy feta-tomato sauce. Adjust the seasoning if necessary.

                Garnish and Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired. Enjoy your delicious baked feta pasta!
