2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

3/4 cup nonfat Greek yogurt

1 large egg

1 teaspoon vanilla extract

1/4 cup of milk (add more if needed for consistency)

Coarse sugar for sprinkling (optional)

Cooking spray or parchment paper for baking

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well to combine.

      In another bowl, whisk together the Greek yogurt, egg, vanilla extract, and milk until smooth.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Add a bit more milk if necessary; the batter should be thick but not dry.

          Gently fold in the diced apples, ensuring they're evenly distributed throughout the batter.

            Using a spoon or a small ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.

              Optional: Sprinkle coarse sugar on top of each fritter for an extra crunchy texture.

                Bake in the preheated oven for about 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let them cool for a few minutes on the baking sheet before transferring to a wire rack.
