Ingredients
  

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

2 cups milk (dairy or non-dairy)

2 large eggs

¼ cup maple syrup or honey

1 teaspoon vanilla extract

2 medium apples, peeled and diced (about 2 cups)

½ cup chopped nuts (e.g., walnuts or pecans) - optional

¼ cup raisins or dried cranberries - optional

Instructions
 

Preheat your oven to 375°F (190°C) and grease a muffin tin or line with silicone muffin liners.

    In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.

      In another bowl, whisk together the milk, eggs, maple syrup (or honey), and vanilla extract until combined.

        Pour the wet ingredients into the dry ingredients and stir until well mixed.

          Gently fold in the diced apples, chopped nuts, and raisins/or dried cranberries until evenly distributed.

            Divide the oatmeal mixture evenly among the prepared muffin tin cups, filling each cup about ¾ full.

              Bake in the preheated oven for 25-30 minutes or until the tops are golden and a toothpick inserted in the center comes out clean.

                Let the oatmeal cups cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  Enjoy warm, or store in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave as needed.
