Ingredients
  

8 oz elbow macaroni

4 slices of thick-cut bacon, chopped

2 tablespoons unsalted butter

1 tablespoon all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tablespoons grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and let drain on paper towels, leaving the bacon drippings in the skillet.

      Make the Cheese Sauce: In the same skillet with the bacon drippings, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until bubbly. Slowly whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce thickens, about 3-5 minutes.

        Add Cheese and Seasonings: Remove from heat and stir in the shredded cheddar and mozzarella cheeses until melted and smooth. Add in the Dijon mustard, garlic powder, onion powder, and season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce and mix until the pasta is fully coated. Stir in the crispy bacon, reserving a bit for topping if desired.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish.

              Topping: In a small bowl, mix the panko breadcrumbs and grated Parmesan cheese. Sprinkle this mixture evenly over the mac and cheese.

                Bake: Place in the preheated oven and bake for 20-25 minutes, or until golden brown and bubbly on top.

                  Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley and serve hot, optionally topping with reserved bacon bits.
